The Fussy Patron and the Fed-Up Cook

The story of the potato chip begins in 1853 at Moon's Lake House in Saratoga Springs, New York, where chef George Crum (born George Speck), an African-American and Native American culinarian, worked in the kitchen. A demanding customer, often cited as railroad magnate Cornelius Vanderbilt, repeatedly sent back his order of French-fried potatoes, complaining they were too thick and soggy. Frustrated by the constant rejections, Crum decided to teach the picky patron a lesson.

From Prank to Phenomenon

In a fit of pique, Crum intentionally sliced potatoes paper-thin, fried them to an extreme crisp, and heavily salted them, expecting the dish to be inedible. To his surprise, the customer loved the crispy, salty shards, and other diners quickly began requesting 'Saratoga Chips'. This accidental invention became a signature dish at Moon's Lake House and later, when Crum opened his own restaurant, 'Crum's Place', a basket of these famous chips was placed on every table.
