The accidental discovery of flaked cereal occurred around 1894 when John Harvey Kellogg and his younger brother, Will Keith Kellogg, left cooked wheat dough out overnight. When they later rolled it through a process to make it more digestible for patients, it unexpectedly formed flakes. While John Harvey initially saw these wheat flakes (and later corn flakes in 1898) as a health food for his sanitarium patients, Will Keith recognized their vast commercial potential. The brothers famously feuded when Will insisted on adding sugar to make the cereal more appealing to the broader public, a move John Harvey vehemently opposed as it went against his strict dietary principles. Will Keith eventually broke away, founding the Battle Creek Toasted Corn Flake Company (later Kellogg Company) in 1906, and with sugar, transformed the accidental flakes into a breakfast empire.
