An Ancient Asian Ancestor

The story of ketchup begins in coastal China, around 300 BC, where a fermented fish sauce known as 'kê-tsiap' or 'koe-cheup' was a staple condiment. This savory brine, made from fermented fish paste and soybeans, was a crucial part of regional cuisine and was valued for its umami flavor and ability to preserve food.

British Adaptation and the Mushroom Era

European traders and sailors, particularly the British and Dutch, encountered 'kê-tsiap' in Southeast Asia (modern-day Malaysia, Indonesia, and the Philippines) during the 17th and 18th centuries and brought recipes back home. Unable to easily replicate the original Asian ingredients, British cooks experimented, creating versions of 'ketchup' that featured ingredients like mushrooms, walnuts, oysters, or anchovies, but notably, no tomatoes. For centuries, tomatoes were often considered poisonous in Europe, delaying their culinary acceptance.

The Rise of the Tomato and Heinz's Innovation

The pivotal shift to a tomato-based sauce occurred in America, with the first known published recipe for tomato ketchup appearing in 1812, credited to scientist and horticulturist James Mease. This early tomato ketchup gained popularity, and in 1876, Henry J. Heinz introduced his famous Heinz Tomato Ketchup, originally called 'Catsup'. Heinz's innovations, including increased sugar and vinegar content, improved preservation and flavor, cementing tomato ketchup's place as a global condiment.
